Joy of Cooking



While in the states on a two week vacation with my family I picked up a new vegetarian cookbook. Barnes & Noble had quite the spread of vegan & vegetarian cookbooks. Who knew there were so many HUGE books on the topic for sale in upstate New York? Fun to look through and find one that included recipies with ingredients I could find in my "normal" life. I decided on the joy of Cooking: All about Vegetarian Cooking. With a mere 128 pages it logged in as the smallest book on the shelf but full of classic recipies I'm dying to master.

Today we're having a Couscous salad with chickpeas and a yogurt/honey dressing. Dinner will include some zucchini pancakes. I'll let you know how they turn out...but I can't wait to start cooking and eating. Feeling the joy!
